Chef Volio was the last interview we conducted.  We had stopped at a few businesses in Lafitte and all advised us – if you want to talk to someone - talk to Volio. We found his restaurant on a partially paved road near a stretch of the adjacent Bayou. The door had a closed sign but we could see signs of life and several cars parked out front.  We peaked in and found a dozen people preparing large trays of food and Volio directing the action.  His restaurant had been hired to provide food for the oil spill clean up workers which was a much needed boost after losing the bulk of this business to the oil spill. Like others we talked to he was grateful that he was getting an income but fears for those that are not working and the long term impacts of the spill - in particular the impact a hurricane will have if it brings oil on the land. As he commented - "All the lunch and dinners in the world won't help then - once the oil gets in - the whole community will be over with."
